You will need :-
For the cake
6 oz of margarine
6 oz of sugar
3 eggs
5 oz of flour
1 oz of chocolate powder
1 squeeze of golden syrup
For the butter icing
4oz margarine
8oz icing sugar
chocolate powder - to taste
Chocolate buttons for decorations
Pre heat the oven to 180 degrees
Put the 6oz of margarine and sugar into a bowl and mix them together for a smooth buttery texture.
Then add the eggs. I always break my eggs into a small bowl first then add them one by one into the mixture. I use a high speed and let loads of air into the mixture.
Add the flour and a squeeze (around a table spoon) of syrup and whiz on low.
Grease two round cake tins and add the mixture and place in the oven to bake for 15 minutes or until baked through.
While the cake is cooling make the icing.
Now for the butter mixture, I'm going to be honest, I'm absolutely no expert at butter icing. I usually add everything in a bowl and just hope for the best.
As much as I love my kitchenaid, I always use my handmix to make icing, I just find it easier.
So, I just bung it all in a bowl and mix it up.
Then once the cakes have cooled, ice to your liking.
This really is the tastiest cake recipe I have ever tried and I often change it slightly and add orange flavouring to make chocolate orange cake. Which is delicious! I hope you enjoy making this cake. Or to make a Victoria Sponge use 6 oz of flour and leave the chocolate powder out.
