Potato and Spinach Pancakes - Recipe

This recipe is simple yet delicious. 

Perfect for brunch, lazy Sunday morning in bed with a glass of orange juice. I can picture it now. 

Now I'm going to admit. I made way too much for one person. The recipe makes 4 pancakes which will serve 2 people. When I make them again for myself I will half the potatoes and the garlic.  

You will need. 

4 potatoes, 
2 cloves of garlic, 
2 knob of butter,  
2 handfuls of spinach, 
3 eggs, 
3 tablespoons of Coconut oil. 

Firstly, peel your potatoes and chop them in to small chunks. 

Add them to a pot of boiling water and let them boil until they are tender. Prod with a fork so you don't burn yourself. 

While your potatoes are boiling add a tablespoon of coconut oil to a frying pan on a low head and wilt your spinach. 

Mash your garlic and add to the spinach while it is in the frying pan. 

Once your potatoes are tender, drain the water and get mashing them. 

I added the 2 knobs of butter at this point and kept mashing. 

There will be no lumps in my mash unlike the mash I used to have at school. 

Once your mash is lump free add the garlic and the spinach and stir in. 

Crack open an egg and add this into the mix too. The egg acts as a binding agent to hold the pancakes together. 

Add a little salt and pepper in the pan too and stir some more. 

Grab your frying pan again. Just the same one that you used for your spinach and add another tablespoon of coconut oil and pop on a medium heat. 

Make a pancake shape with the mash and spinach mixture and fry until golden brown. 

^^Granted mine are strange pancake shape but you get the idea? 

I only had a small frying pan but a large one will fit more than two in. 

The pancakes were around the size of my hand. But you can make them as small or as big as you wish. 

For the egg, in an ideal world I would have a poached egg on top. However I can't poach an egg. Tragic, I know. So I settled with 2 fried eggs. 

I fried my eggs off in coconut oil. 

Once your pancakes are golden brown stack'em up pop your egg on top and there you have the perfect brunch to enjoy. Grab a book or a magazine to read through.
